The use of enzymes in food and beverages date back to the beginning of civilisation. Though unknowingly, throughout history enzyme systems have been utilised for preserving food, in the fermentation of beverages and bread making. The gradual awareness on the role of enzymes in improving the quality of certain foods, eventually led to great advances in understanding enzyme chemistry by food technologists and to the selection of specific enzymes for achieving desired end products without resorting to guesswork and trial and error adopted previously.

 

By the last two decades of the past millennium, the use of commercial enzymes had grown from an insignificant role in the food industry to an important aspect of food processing. Today, food technologists are playing an increasingly vital role in the food industry by improving the flavour, texture, organoleptic, and nutritional quality of virtually all types of foods, snacks and beverages, by the application of selected enzymes that can directly or indirectly improve the quality of the final product.

Food & Beverages

Alcohol


Potable alcohol is produced from feed stocks containing starch or sugar. While from starch based feed stock like corn, wheat, rice and millet simple sugars have to be  extracted, sugar based feed stock such as sugar cane juice or molasses contain readily available simple sugars for fermentation. Starch conversion to simple sugars involves the two-step enzyme hydrolysis process of liquefaction and saccharification, after which ethanol is obtained through fermentation with yeast and distillation. UAL offers economic and efficient solutions for the entire potable alcohol production process.

Bakery & Confectionery


Enzyme products from UAL are used in baking for the conversion of starch for strengthening and bleaching of the dough, for improving gluten strength and to reduce gluten elasticity; all essential for maintaining volume, crumb softness, crust crispiness, browning, texture and appearance and retaining freshness. In confectionery, UAL enzymes are used to prevent hardening of fillings containing sugar, to break down starch syrup into glucose syrup; change glucose into fructose, to break down sucrose into glucose and fructose; to improve the taste of the finished product.

Fruit Extracts


Juices extracted commercially from ripe fruits often have a cloudy appearance and lack the texture, taste, mouth-feel and stability that customers prefer. UAL’s Zymo range of enzymes play a vital role in improving these characteristics and are used for fruit liquefaction, masceration, depectinisation and oxygen removal and help assure that maximum juice is extracted from the fruits, resulting in significant reduction of costs and wastage while yielding juices that are clear, stable, sediment free and aesthetically pleasing, adding enhanced value and fineness to the packed juices.

Zymo range of enzyme convert starch from grain or tuber sources into different sugars by liquefaction and saccharification yielding various starch-based products and enable processing industries to produce at lower costs, a wide range of syrups and modified starches used in the food industry, with reduced use of strong acids and bases, lowered energy consumption and greenhouse gas and lesser corrosive waste, while offering a safer production environment for employees and enhanced quality for the consumers.

Sugar


Within the array of bio-catalytic solutions that UAL offers, there is a range of products, that are tailored to meet the exacting demands of the cane sugar industry in sugar production and refining, compatible with the inherent high temperatures and pH values. Our Zymo enzyme formulations are used for removing materials that cause high viscosity and slow filtration during the initial vacuum evaporation stage, for controlling the action of substances like dextran and raffinose that have the sucrose molecule as part of their structure and inhibit sucrose crystal growth, and in the mill sanitation process to control contamination and losses of sugar inversion.
